Tomato Aspic: The Retro Savory Jelly, Done Right

Ingredients

  • 2 envelopes (2 tablespoons) unflavored gelatin
  • 1/2 cup cold water (for blooming)
  • 3 1/2 cups tomato juice, divided
  • 1 small onion, quartered
  • 2 celery stalks, roughly chopped (plus 1/2 cup finely diced, for folding in)
  • 1 bay leaf
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh lemon juice
  • 1/2 cup sliced green olives (optional)
  • 1/2 cup cooked shrimp, patted dry (optional)

Instructions

  1. Sprinkle the gelatin evenly over the 1/2 cup cold water and let it sit 5 minutes, until it looks like wrinkled gel.
  2. In a saucepan, combine 3 cups of the tomato juice with the quartered onion, roughly chopped celery, bay leaf, sugar, and salt. Bring to a boil, then reduce and simmer 15 minutes.
  3. Pour the hot juice through a fine-mesh strainer into a clean bowl, pressing to extract the liquid. Discard the solids — this is what gives the aspic its clear, glossy set.
  4. Whisk the bloomed gelatin into the hot strained juice until fully dissolved and no granules remain.
  5. Stir in the remaining 1/2 cup tomato juice, the Worcestershire sauce, and the lemon juice. Let the mixture cool to room temperature.
  6. Once the mixture is at room temperature and just starting to thicken, fold in the finely diced celery and any optional olives or shrimp, patted dry.
  7. Lightly oil a 4- to 6-cup mold, pour in the mixture, and refrigerate at least 4 hours, or overnight, until fully firm.
  8. Dip the mold in warm water for a few seconds, then invert onto a serving plate to unmold.

Notes

Strain the juice for a clear, glossy set — skipping this is the main cause of a cloudy aspic. Keep the ratio at about 1 tablespoon gelatin per 2 cups liquid for a firm, sliceable result, and increase slightly if adding a lot of mix-ins. Do not use fresh pineapple, kiwi, mango, or papaya — their enzymes stop gelatin from setting.
