Description

A simple, classic strawberry gelatin made with Knox unflavored gelatin and real fruit juice — light, refreshing, and easy to set.

  • 2 envelopes (14g) Knox unflavored gelatin
  • 1 cup cold water, divided
  • 2 cups fruit juice (strawberry, cranberry, or grape)
  • 1/4 cup granulated sugar (optional)
  • 1 cup fresh strawberries, sliced

Instructions

  1. Pour 1/2 cup cold water into a bowl. Sprinkle gelatin evenly over the surface and let it bloom for 5 minutes.
  2. Heat the fruit juice and sugar (if using) until just steaming — do not boil.
  3. Pour the hot juice over the bloomed gelatin and stir until fully dissolved.
  4. Stir in the remaining 1/2 cup cold water and let cool for 10 minutes.
  5. Fold in the sliced strawberries, pour into a dish or molds, and refrigerate at least 3 hours until set.

Notes

For a firmer, sliceable set (Knox Blox style), use 1.5× the gelatin. Avoid fresh pineapple, kiwi, or papaya — their enzymes prevent setting.
