Strained okra water being poured into a glass through a small strainer

Okra Water

  • Author: Hannah Bell
  • Total Time: 8 hours 5 minutes
  • Yield: 2 glasses 1x

Description

A simple overnight okra water made with fresh okra pods and filtered water. It takes 5 minutes of work, then the pods soak in the fridge for 8 to 12 hours until the water turns lightly gel-like.

Ingredients

Scale
  • 4 fresh okra pods (about 3 to 4 inches long each), rinsed
  • 2 cups (480 ml) filtered water
  • A squeeze of lemon juice or a few mint leaves, for serving (optional)

Instructions

  1. Rinse the okra pods and pat them dry. Trim off the stem end and the tip of each pod.
  2. Slice each pod in half lengthwise, or into rounds about 1/2 inch (1 cm) thick, so the inside of the pod is exposed.
  3. Put the pieces in a clean jar or pitcher and pour in 2 cups of filtered water. Make sure the pieces are fully covered.
  4. Cover and refrigerate for 8 to 12 hours, or overnight. Up to 24 hours is the longest soak the sources mention.
  5. Strain the liquid into a glass, pressing the pieces lightly with a spoon to release the gel. Discard the pods.
  6. Add lemon juice or mint if you like, and drink it cold.

Notes

This is a drink recipe, not a treatment. Okra water has not been studied directly, so the health claims you see online are anecdotal. If you take blood thinners or diabetes medication, are prone to kidney stones, or have IBS or a food sensitivity, check with a healthcare provider first. Keep it refrigerated and drink it within 24 hours. If it smells sour or looks cloudy, throw it out.

Nutrition values are an upper estimate based on USDA data for raw okra (4 pods, about 48 g, split across 2 glasses). The pods are discarded, so the actual amount in the water is lower.
