  • Diet: Vegan

Description

A creamy, dairy-free chia seed pudding made with water, naturally rich in fiber and perfect for an easy breakfast or snack.

Ingredients

Scale
  • ¼ cup chia seeds
  • 1 cup cold water
  • 12 tablespoons maple syrup
  • ½ teaspoon vanilla extract (optional)
  • Pinch of salt (optional)

Instructions

  1. Combine chia seeds, water, maple syrup, vanilla extract, and salt in a jar or bowl.
  2. Whisk for 30 seconds until evenly mixed.
  3. Let sit for 10 minutes.
  4. Whisk again thoroughly to break up any clumps.
  5. Cover and refrigerate for at least 2 hours or overnight.
  6. Stir before serving.
  7. For an extra creamy texture, blend one-third of the pudding and stir it back in.
  8. Top with berries, banana, nut butter, coconut, or granola as desired.

Notes

Use a 1:4 chia-to-water ratio for the best texture. A second whisk after 10 minutes helps prevent clumping and creates a smoother pudding.
