Description
A simple, long-simmered bone broth — the foundation recipe, no special equipment needed beyond a stockpot.
Ingredients
- 2–3 pounds beef, chicken, or fish bones
- 1 tablespoon apple cider vinegar
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped
- 1 onion, quartered
- 2 bay leaves
- 1 teaspoon whole peppercorns
- Water, enough to cover the bones by 2 inches
- Salt, to taste
Instructions
- Place the bones in a large stockpot and cover with water by about 2 inches.
- Add the apple cider vinegar and let the pot sit for 30 minutes before turning on the heat. This helps draw minerals and collagen out of the bones.
- Bring to a boil, then reduce to a very low simmer.
- Skim off any foam that rises to the surface in the first hour.
- Add the carrots, celery, onion, bay leaves, and peppercorns.
- Simmer uncovered for 12 to 24 hours, checking occasionally and topping up water if needed to keep the bones covered.
- Strain the broth through a fine-mesh sieve into a large bowl or containers, discarding the solids.
- Season with salt to taste. Cool before refrigerating.
